Ingredients:

packet of spring roll sheets (50 pieces)

cucumber

carrot

white turnip

one
handful of dried shrimp

shallot

2
garlic cloves, minced

eggs [Only use a white egg]
·

tablespoon of olive oil

Method
:
1.
Remove
a packet of spring roll sheets from the fridge so that you can enjoy using them
later.
2.
Grind
cucumbers, carrots and white turnip into thin slice – like a matchsticks
3.
Blend
or chopped onions, garlic, and dried shrimp.
4.
Heat
a wok over high heat with olive oil and add in all the crushed ingredients
(shallots, garlic & shrimp)
5.
Than
after 2-3 minutes put in all the grind ingredient (white turnip, carrot &
cucumber), don’t fry it too long so it will be crispy later.
6.
Add
sugar or salt as desired…then turn-off the fire..
7.
Set
aside the fried vegetables in a greased container or transfer it to a bowl to
cool slightly and drain off any excess oil and moisture.
8. To
make the spring rolls, lay a layer of spring roll pastry on a clean work
surface with a corner facing toward you
9.
Place
1 tablespoon of the vegetable mixture on the corner of the pastry and begin to
diagonally roll the pastry up tightly around the filling. When you get to the
middle of the pastry, fold in the corners from either side and brush a little
of the white egg on to the remaining corner, finish rolling up and press
together to seal so it won’t open when you fry it later.

Repeat
with the rest of the mixture and pastry

Fill
a deep saucepan with oil and heat to 180°C. Deep-fry the spring rolls in
batches for 2–3 minutes, until golden brown and crispy. Before dive in, let
make a quick sauce for it. Let go!!
How To
Make the Sauce for it
Ingredients:

2 cloves of
garlic minced
·
1 teaspoon soy
sauce
·
5 red
chili finely chopped OR 1 tablespoon red pepper flakes
·
2 teaspoons cornstarch
or arrowroot powder
·
¼
sugar
·
1/2 cup mayo
·
1 tablespoon ketchup
·
1/2 teaspoon salt
·
1-2 tablespoons water
Method
:
1.
First
mince the garlic and finely chop the fresh chili if using. Remove some seeds if
you prefer a less spicy sauce.
2.
In
a saucepan, combine the vinegar, 1/2 cup water, sugar, garlic, soy sauce, mayo,
ketchup, and chopped chili or pepper flakes.
3.
Cook
over medium heat and stir well to dissolve the sugar.
4.
In
a small bowl with a fork, whisk together the 1 tablespoon water and 2 teaspoons
arrowroot powder or corn starch.
5. Whisk
until combined well. Drizzle this into the pan and continue to cook until the
sauce thickens and coats the spoon well.
6.
Remove
from heat.
7.
Taste
and add more salt or seasoning you prefer. Then thin to your desired
consistency with water.
8.
Enjoy
your spring roll.
